Fall Birthday and Pie Party Inspiration

Guess who turns 40 soon?!!
that's right...me!
Being that my birthday is in the Fall and that I love pies, I'll be celebrating with a PIE PARTY. If you follow me on instagram you've probably seen some of the inspiration already.  I'm sharing there with #legendary40sparty.

Happy Halloween from In Flight!

I love for Halloween to be fun around the blog. Last year I celebrated here on the blog with an awesome fun Hoot~o~ween. This year I'm celebrating again with an owl themed halloween with wonderful help by Lauren Mckinsey who created a really fun and cute owl ghost for us from a variation to her already fun Halloween Collection.
 
 
Fun, short and sweet it's what I like to call this one. It's a great small set up still full of sweets and treats and wonderful colors to compliment a fun theme.


I wanted a strawberry flavored cake and a cakepop topper on it. I thought a caramel apple would be the cutest thing and Sweet Whimsy Created the most cutest ones for us!

Other treats included caramel corn, mini donuts, and cotton candy.

Fall Flight {A Houndstooth Halloween} as seen on Amy Atlas

 
Fall Flight
{A Houndstooth Halloween Inspired Shoot}
 
 
A natural and fresh approach to Halloween.  Owls and Crows have their Fall Flight, the time where they make their presence on our celebrations.
While the style on this Fall table remains fresh with light colors and white pumpkins, it provides your guests with a warm full tablescape
sure to please the eyes and the taste buds.  A dessert table placed behind is a great alternative to treat your guests to a little something more  after dinner.
 

 
This table is decorated with a white tablecover as well as white and beige laced pattern plates, clear glasses, white straws and neutral color napkins.  The
halloween touches are added with owls and crows as well as a black and white houndstooth pattern.  The dessert serving pieces placed on the table
 remain white and light.  The sweets in the other hand bring in the contrast, sweetly and gracefully with chocolate.  Chocolate - Almond Cake Balls with
owl fondant toppers, chocolate pudding, and a sweet and salty Chocolate - Pretzel Cake. 
 




 
Mason Jars were painted with glossy white spray paint and feathers were added to the flower arrangements to add to the 'Flight' element of the table. 
Favors sacks with pumpkin seeds were created with houndstooth fabric and then an aged halloween tag was added which is also a great idea for place
cards.

FALLowing...

I LOVE Fall for many reasons, one being that since I moved to Knoxville, Tennessee a few years back I've been fortunate enough to enjoy a good drive through the Smoky Mountains and watch the colors changes, take in the breeze and just be grateful for again new beginnings...
 
 
Fall means a lot to me see,
 I'll be celebrating, gratefully another birthday...
In Flight's 2 Anniversary on October 28th,
 and 1 year since the launch of
 my Event Planning and Styling Company In Flight Celebrations LLC!
{Which launched officially in November 12, 2011}
 
 
 
Of course we'll celebrate!!!
There will be giveaways (on top of the monthly giveaways),
there will be fun styled HALLOWEEN, FALL, and THANKSGIVING inspiration shoots,
and there will be a FALL EDITION of In Flight's NEST {Boxed Celebrations};

Apples and Pecans Thanksgiving Inspiration

This year for Thanksgiving I'm inspired in something other than the typical oranges and browns.  I like a darker shade of brown, a khaki or tan color: burlap perfectly! Kraft paper and red accents.  And I like the idea of exchanging the pumpkins for apples.  {I will still enjoy a pumpkin cheesecake with my family, don't get me wrong} But candy apples and mini pecan pies are on my list too right along with apple cake pops!

Sweet Potato Cupcakes with Marshmallow and Caramel Topping

Fall's around the corner!
Last year for my birthday and because of my love for all things pumpkin, sweet potato or fall I baked Sweet Potato Cupcakes for my Rustic Owl Dessert Table.




Recently on a Hobby Lobby Facebook Wall Contest I shared my Cupcakes and received requests for the recipe.  I'm sharing that with you all today, but I can't take the credit for it...it's a great recipe from Better Homes and Gardens Magazine and I adjusted it by adding my own marshmallows and caramel for topping instead of the frosting that the recipe calls for.  I'm adding that recipe in here too for you to choose!





Sweet Potato Cupcakes

Ingredients
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 cup butter, softened
1-1/2 cups sugar
3 eggs
1 17.2 oz can vacuum-packed sweet potatoes (unsweetened), mashed
1/2 tsp. vanilla


Directions
1. Preheat oven to 350 degrees F. Line twenty four 2-1/2-inch muffin cups with paper bake cups; set cups aside.
2. In medium bowl stir together the flour, baking powder, cinnamon, baking soda, and salt; set aside.
3. In large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar and beat on high speed until light and fluffy, about 2 minutes. Add eggs, one at a time, beating on low speed after each addition until combined. Add sweet potatoes and vanilla, beating until combined. Add flour mixture; beat until combined (batter will be thick).
4. Divide batter evenly among prepared muffin cups. Bake about 20 minutes or until tops spring back when lightly touched. Cool in pan on wire rack for 1 minute. Remove from pan and cool completely.
5. Place Cream Cheese Frosting in large resealable plastic bag. Cut a 1/4-inch opening in one corner of bag. Pipe frosting on top of cupcakes. Sprinkle with orange peel. Makes 24 cupcakes.


For the Marshmallow and Caramel Topping -  Place a few small size marshmallows on top of the freshly baked cupcakes and drizzle with caramel topping.  Place back in the over for a few seconds to melt and give it a golden top.

For Cream Cheese Frosting -In large mixing bowl beat one 8-ounce package cream cheese, softened, and 2/3 cup butter, softened, with electric mixer on medium speed for 30 seconds. Add 2 tablespoons bourbon or milk and beat until combined. Beat in 8 cups powdered sugar, about 1/2 cup at a time, until smooth and of a good piping consistency. Makes 4-1/3 cups.{Recipe from BHG}
